Call them muffins, mini frittatas, or crustless quiches – whatever their name, these are the most convenient way to have eggs in the morning. Make a whole dozen and stick half in the freezer. Microwave them for one minute and you have an amazing hot breakfast!
Serves 6 (two muffins per serving)
Ingredients:
10 ounces frozen spinach
6 eggs
¼ teaspoon salt
¼ teaspoon pepper
½ tablespoon coconut oil
½ large white onion - chopped
Directions:
– Preheat oven to 350 degrees.
– Defrost spinach in microwave and drain well, or soak a bag in warm water until defrosted.
– In a large bowl, whisk eggs together and add salt and pepper. Set aside.
– In a pan, heat the coconut oil and sauté onions until translucent, 3 to 5 minutes. Remove from heat.
– Add the onion and spinach to the eggs and mix well.
– Spoon the mixture into a twelve-compartment nonstick or greased muffin tin.
– Bake for 15 to 20 minutes, or until eggs are cooked through.
Ingredients:
½ ripe avocado mashed
5 thin slices of peeled seeded cucumber
1 teaspoon of olive oil
Directions:
– Mix in the food processor until well blended.
– Apply to the face for 10 minutes.
– Wash with warm water.
